The cuvée La Pie Chardonnay – Tome V is an Extra Brut Blanc de Blancs, crafted from 100% Chardonnay, with grapes exclusively from the Les Prés Mousseux terroir in Écueil, harvested in 2022. The soil, composed of clay and silt with a south/southeast exposure, gives this wine natural richness and structured elegance. Fermentation takes place in Burgundian oak barrels with indigenous yeasts, followed by bâtonnage (around ten times). The wine is finished as an Extra Brut, in an artisanal style; the bottle is sealed in the traditional way, with cork and staple. Production is extremely limited: only 2,940 bottles.
