Made exclusively from 100% Savagnin grapes grown on limestone-rich slopes in Arbois, this wine undergoes a highly specific and traditional aging process: at least 6 years and 3 months in old oak barrels that are never topped up. During this extended oxidative maturation, a natural yeast veil known as voile forms on the wine’s surface, protecting it and simultaneously transforming it. Tony Bornard, son of the renowned natural winemaker Philippe Bornard, continues his family's legacy with a strong commitment to minimal intervention and terroir expression. This 2012 vintage is a masterwork of natural winemaking—fermented with native yeasts, unfiltered, unfined, and untouched by additives. The result is a profound wine that bursts with flavors of walnut, curry spice, saffron, dried apples, mushrooms, and hints of fino sherry. Its salty minerality and oxidative complexity unfold in a layered, persistent finish that lingers long after each sip.
