Mouth: Ample attack, saline mouth, and generous, with notes of blond tobacco, white pepper and praline. The sommelier's advice: Foie gras. Lobster, lobster with white butter. Lamprey Bordeaux style. Maringo veau. Saint Félicien with truffles. Grape variety(s): Marsanne. The vines over 50 years old give a small production guaranteeing a high quality. Harvest: A manual harvest is generally done at very good maturity (natural potential greater than 14% of alcohol). Soil: The grapes used to develop the Parcel Selection "Le Méal" come from the Méal hillside. It is a soil of very old fluvio-glacial alluvium, with many pebbles promoting soil warming. Vinification: After pressing the whole grapes, the must is cold deburned for 24 to 48 hours. About 50% of the volume is vinified in half-new muids and the others ferment in tanks. Breeding: Before bottling, aging is done in barrels with sticks and is monitored by frequent tastings. These are the organoleptic criteria that determine the duration of passage under wood. In general, bottling is done 10 to 12 months after harvest. Alcohol degree: 14.5
