Bottles purchased and stored at Cavissima. R. Parker - Wine Advocate - 100/100 Vinous - 94/100 Jancis Robinson - 17/20 VINEYARD The grapes used to make the Sélection Parcellaire “Le Méal” come from the Méal hillside. The soil is composed of ancient fluvio-glacial alluvium, with numerous pebbles that promote soil warming. Organic. VINIFICATION AND AGING Harvesting is generally carried out by hand at very good maturity (natural alcohol potential exceeding 14%). Organic. After pressing the whole grapes, the must is cold-set for 24 to 48 hours. Approximately 50% of the volume is vinified in new demi-muids and the rest ferments in vats. Before bottling, aging takes place in barrels with stirring and is monitored by frequent tastings. The organoleptic criteria determine the length of time spent in wood. Generally, bottling takes place 10 to 12 months after the harvest.
