Wine well preserved in the cellar The great wine of Château Mouton-Rothschild comes from the best vines planted on the “Plateau de Mouton,” part of the estate's 90 hectares. Their root system is able to anchor itself in particularly deep gravel soils. As is customary in Pauillac, Cabernet Sauvignon dominates the blend. It can account for up to 80% depending on the vintage, complemented by Merlot and a touch of Cabernet Franc and Petit Verdot. The grapes are, of course, harvested by hand. Each berry is carefully sorted in the vineyard and then in the cellar. Once destemmed, the grapes are placed in vats without being pressed. Each vat is a different size, corresponding to the various plots of the château.
