The Château Pavie belongs to Gérard Perse, estate he bought in 1998. He works with the best experts (including Michel Rolland) in order to reorganise the entire production and manufacturing of its wines.
The vineyard covers 37 hectares and offers an exceptionally varied land facing south: a third clay, a third gravel, a third sand. The produced wine presents fine tannin and a very subtle natural strength.
The harvest is carried out by hand. Fermentation is conducted in temperature-regulated wooden vats for 3 weeks. Then the wine is aged in new oak barrels for 18 to 24 months.
The 2000 vintage was awarded top marks by Robert Parker guide. A deserved recognition as it is now considered one of the best wines in the world by experts.
Grape variety : 30% Cabernet Franc, 10% Cabernet Sauvignon and 60% Merlot.
Ageing : 10 to 40 years.
Annual production : 96 000 bottles.
